Easy Vegan Golden Brown Waffles (Light and Crispy)
Rich buttery vegan golden brown waffles with a shatteringly crisp crust encasing a soft fluffy cake within. So good that nobody will even know that they are vegan!

Ingredients
64g(¾ cup) oat flour*
64g(½ cup + 2 tsp) all purpose flour
2tspbaking powder
½tspsalt
pinchofground cinnamon,optional
pinchofground nutmeg,optional
75g(5 tbsp) melted vegan butter*
180mL(¾ cup) plant based milk,plus extra just in case (see recipe)
36g(2 tbsp) maple syrup/agave/honey
1tspvanilla extract
Instructions
Place oats in the blender and grind to make oat flour (skip this step if you already have oat flour). Place the rest of the ingredients into the blender and mix until everything is combined and there are no more large clumps of flour. Set aside for about 5 minutes to thicken slightly.
Meanwhile, plug in your waffle maker. Heavily grease* the waffle irons (both sides) with a pastry brush to coat all the nooks and crannies.
Once the waffle maker is hot and ready, pour in the batter then gently spread it to the edges. Avoid overfilling. Once the steam dissipates, remove the waffle and repeat the process with the rest of the batter. If the batter gets too thick, add a splash of milk and mix. Serve waffles while hot with a pat of butter a¾nd maple syrup. Enjoy!

*Make oat flour by measuring the same amount of rolled oats and blending to a fine powder*You can replace the all purpose flour with ¾ cup oat flour to make this gluten free.*Can substitute the vegan butter with olive oil or refined coconut oil. *I prefer to grease the waffle iron with vegan butter but you can also use olive oil or another neutral tasting oil.
